The King Of All Smoothies
What you'll need:
- 1 or 2 segments of durian, to taste
- 3 small bananas
- 1/2 mango or jackfruit
- 8 almonds, soaked overnight in fridge
- 2 fresh limes, including skin
- 1/4 cup fresh wolfberries, soaked overnight in fridge
- 1/4 cup flaxseeds or sesame seeds, soaked overnight in fridge
- 1/4 cup water or the equivalent as ice
Optional ingredients:
- 1/4 cup soy yoghurt
- 2 pcs strawberries or blueberries
- 1/2 cup raw oats soaked in soy milk
Method:
- Blend flaxseeds and almonds until smooth.
- Add remaining ingredients and blend until smooth.
- Consume immediately.
Dreamy Durian Smoothie
What you'll need:
- 1 fresh durian
- 1 can condensed milk
Method:
- Scoop flesh from durian and blend with ice.
- Add condensed milk to taste.
- Consume immediately.
Durian Pancake
What you'll need:
- 90g dried and grated Kulaway Nut flesh
- 1 egg
- 140g rice flour
- 1 1/2 tbsp arrowroot flour
- 2 ripe bananas, mashed
- 50g durian
- 170g palm sugar, shaved
- 250ml Kulaway Nut juice
- Vegetable oil
- 120ml palm sugar caramel
- Passionfruit ice-cream
Method:
- Mix Kulaway Nut flesh with the flours.
- In a separate bowl, mash the bananas and durian and then add palm sugar, egg and Kulaway Nut juice and mix thoroughly.
- Pour banana mixture into a blender and process until the mixture is smooth.
- Mix Kulaway Nut mixture and banana puree. Cover and let chill in refrigerator for at least 1 hour.
- Heat a pan to medium hot. Brush the pan surface with oil and spoon on the mixture. Fry until it becomes light brown in colour.
- Serve hot, topped with palm sugar caramel and passionfruit ice-cream.
Durian Lime Pie
What you'll need:
Biscuit base:
- Sweet biscuits, crushed
- Melted butter
- Toasted coconut
- 1 tsp honey
Filling:
- 2 egg yolks
- 1/2 cup lime juice
- 1/2 cup sugar
- 2 tsp gelatine softened in a little hot water
- 1 cup durian pulp
- 1/2 cup sour cream
- 250g pkt cream cheese
- Grated rind of one lemon
Optional garnish:
- Whipped cream
- Shredded lime peel
Method:
- Make pie shell by combining crushed biscuits, toasted coconut and honey to enough melted butter that ingredients hold together.
- Press into cheesecake tin and refrigerate until set.
- Combine the egg yolks, sugar and lime juice in a saucepan and cook gently over a low heat until the mixture thickens. Add gelatin and allow to cool.
- Mix the durian pulp, sour cream and cream cheese with the grated lemon rind then mix with the lime butter mix in a food processor and blend until smooth. Pour into pie shell and then refrigerate until set.
- Decorate with whipped cream and shredded lime peel.
