Char Grilled Chicken with Papaya Salad
What you'll need:
- Olive oil spray
- 4 corn-fed skinless chicken breast fillets
- 100g pkt baby watercress salad
- 600g red papaya, deseeded, peeled, thinly sliced
- 1 yellow capsicum, deseeded, sliced
- 110ml balsamic dressing
Method
- Spray a chargrill pan with oil.
- Heat the pan over a medium-high heat.
- Add the chicken and cook for 4-5 minutes each side or until cooked through.
- Set aside for 5 minutes before cutting into slices.
- Combine the watercress salad, papaya and capsicum in a bowl.
- Divide among serving plates.
- Top the salad with the chicken and drizzle with dressing to serve.

Papaya & Chilli Relish
What you'll need:
- 1.2kg fresh papaya, halved, peel, deseeded and finely diced.
- 3 green shallots, trimmed and finely chopped
- 1/2 bunch coriander leaves finely chopped
- 1/2 bunch mint leaves finely chopped
- 2 fresh red chilli's
- Sea Salt & freshly grounded black pepper
- 1/4 cup fresh lemon or lime juice
- 1 tablespoon finely grated palm sugar
- 1 tablespoon peanut oil
- 2 teaspoons fish sauce
Method:
- Place papaya, chillies, mint and coriander in a large bowl
- season to taste with salt and pepper
- stir until well combined
- whish together in a seperate bowl, palm sugar lemon juice peanut oil and fish sauce in a small bowl until combined
- add to papaya mix and gently toss until well blended
serve with your favourite meat
